Gluten-free protein pancake mix for about 12-15 pancakes

How To Use
Stir the pancake mix to remove any clumps.
Add 1 cup (240ml) of water or plant milk
per 1 cup of pancake mix (70g) and whisk
to a smooth liquidy batter. For sweet pancakes, you can replace some water with treacle.
Let the mixture rest for 5-10 minutes.
Heat a pan with coconut or other plant oil
and add a ladle full of batter. Fry until golden brown, flip over and repeat. Enjoy with fresh fruits or treacle!
PS: Thin savoury pancakes make great gluten-free tortillas, too!
Top tip: prepare the dough and let it rest in the fridge over night. Soaking legumes, such as lentils, helps your body to absorb nutrients better!
No special storage. Store in a dry place out of direct sunlight
